La Kitchenette Souris : Pumpkin Muffins

These are a family favorite. 
I think they are basically the muffin I grew up eating. 
We never really made blueberry or chocolate chip muffins.
Always just pumpkin.

They are really quite easy to make & they freeze very well.

Pumpkin Muffins

4 eggs
2 cups sugar
1 1/2 cups oil
14 oz can pumpkin
3 cups flour
2 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoon baking soda
1 teaspoon salt

Beat first 4 ingredients together, then blend in remaining ingredients.

Put in muffin papers & sprinkle with white sugar & cinnamon.

Bake at 400F for 12-15 minutes, or until a toothpick comes out clean.
